Most of us would like to have more healthy vegetables in our diet, but it isn’t always easy to get them into your meals… or your children! Juicing is a simple and effective  – not to mention delicious – way to get the vitamins, minerals, enzymes and antioxidants from vegetables into your body quickly.

Fresh juices have a very short shelf life as they degrade or oxidize easily. To get the most benefits, drink your vegetable juice as soon as you make it. Store-bought vegetable juice, even the expensive health food store juice, isn’t nearly as tasty or nutritious.

Types of Juicers

There are several centrifugal juicers on the market, which are quite suitable for most home juicing. This is the one we own and use on a daily basis. It’s fast and easier to clean than a masticating juicer.

These chew the fruit/vegetable with a fast-spinning metal blade that pushes it against a mesh filter. Juice is separated from the fruit/vegetable flesh via centrifugal force. Because there is some oxidation and nutrition loss, drink the juice immediately.

A high quality masticating juicer is a good investment if you juice regularly. These juicers chew the vegetables, putting out as much juice as possible and leaving dry pulp. They cost more initially than centrifugal juicers, but extract more juice, and more of the vital nutrition is retained. This is the best type of juicer for leafy greens.

An extra tip for healthier juice is to add an ice cube or two and some fresh lemon or lime juice to the bottom of your collecting jug. This slows oxidization and degradation of the juice, but it’s still best to drink fresh vegetable or fruit juice as soon as you make it.

To experience the benefits of juicing, here are eight of the best healthy vegetables to get you started. Grow these yourself, or look for them in an organic market or farmers market. If you can’t find organic, soak them before use in a basin of water and vinegar.

1. Carrots

High beta-carotene levels in carrot juice make it a great source of pro-vitamin A, and other carotenoids like alpha-carotene for cancer protection. It also has xanthophylls for enhancing your vision.

Rich in potassium for healthy heart and muscle function, carrots also contain magnesium, calcium and phosphorus, along with important trace minerals like manganese, molybdenum and copper for maintaining hair color.

2. Celery

Fresh celery juice is full of health benefits and is especially healthy for your blood pressure and cardiovascular system. It’s also great for reducing inflammation in your body, cleansing and detoxifying and protecting your cells against cancerous changes.

5. Parsley

Parsley is another excellent detoxifying vegetable, notably for your liver and kidneys. Its juice is often recommended for kidney stone prevention and even treatment.

Juicing tomatoes makes their health nutrients highly bioavailable. Mix them with some of the other vegetables to make a concentrated shot of health and energy.

8. Kale

Fresh kale juice has a high concentration of organosulfur compounds. These are being studied for their anticarcinogenic effects, particularly against stomach cancer, colon cancer, ovarian cancer and breast cancer.
