Zucchini – Stop Growing!

Like you I’m always looking for ways to use up some of these zucchini in the garden that just won’t stop producing. Want a new way to use up some of those delicious (and prolific) summer squash? Here’s a really healthy and gluten free recipe for crispy Zucchini Fritters.

Crispy Zucchini Fritters

2 medium zucchini, grated (you could substitute small patty-pan squash)

2 green onions, chopped

1/4 cup minced parsley

1 large egg, beaten

1/2 cup almond flour

1 tsp sea salt

1/4 tsp nutmeg

1/2 tsp baking powder

cooking oil – avocado oil is best for high heat cooking

Directions:

Place the grated zucchini in a bowl and sprinkle with salt. Let it sit for about 10 minutes, then transfer it to a clean towel and literally wring out the moisture.

Place it back in the bowl, and stir in the other ingredients.

Add oil generously to a large skillet, and over medium-high heat, drop in rounded spoonfuls of the zucchini mixture.

Cook the fritters 4 – 5 minutes, until golden brown on the bottom. Flip them, and cook another 3 – 4 minutes.

Drain the fritters on paper towels.

Serve hot, topped with a scoop of sour cream or Greek style yoghurt.

This makes 4 – 6 serving.

For a variation that adds some more  protein, add a quarter cup of freshly grated parmesan cheese to the batter.

Growing Tip:

Short on garden space?

Set a ladder trellis (shaped like a capital A) next to your young zucchini or squash plants, and train them up the trellis – one or two on each side. As they grow, fasten the vines to the cross pieces of the trellis with twine. No searching around for the squash on the ground, and hidden under leaves. Alternatively, a variety of zucchini called Patio Star is only half the size of regular zucchini plants, and ideal for growing in a container. These are mature in 60 days, and are quite prolific.
